The fact that you can actually get a great wine from a cross between Merzling and GM 6493 (whose parents are in the nutmeg and Zarya Severa) is still in need of explanation. Piwis - mushroom -resistant grape varieties - are not yet very popular in the collective perception. This will soon change thanks to Thomas Niedermayr. In its vineyards, Solaris & Co. do not grow alone in order not to use spray agents if possible. Beyond a responsible agriculture and a deep understanding of his surroundings, he also decided to illuminate the sensory properties of his Piwis. To do this, he spends every free minute with his vines, deals with each individual vine individually and vinified in the basement minimalistically at the highest craftsmanship.
His solaris sticks root on the Eppaner Berg, in Putschwan and on the Kalterer Höhe in a lime-rich, partly very karting but profound terrain. The grapes are compressed and spontaneously fermented. The wine is matured for over four months in the used wooden barrel and for another eight months in the steel tank and brought to the bottle unfiltered.
Style & flavors: Tighter and more straightforward than his other two wines. Has a fragrant floral, cool-fruity aroma. Combined energy with depth and voltage with substance. Flows dynamically, vertically and emphatically over the palate.
