About 350 million years ago, the Sausal folded into a chain of hills characterized by Paleozian slate. It differs from the rest of South Styria, the geology of which consists primarily of deposits of the primeval oceans. In contrast, Muschelkalk only occurs in low locations in the Sausal.
Slate and Riesling are two sides of the same medal. In no other rock the grape variety feels so comfortable, nowhere else does it result in such fine and mineral wines. Which is why Riesling looks back on a long tradition in Sausal, even if that is little known.
Warga-hacks vines for the local riesling roots in Kitzeck, the highest winegrowing community in Central Europe. The daily temperatures are high in summer, but drop strongly at night due to the proximity to the Koralpe. The grapes benefit from a long vegetation phase, are aromatic, vital and expressive.
They are read by hand, fermented spontaneously after a short corn period and expanded in the steel tank on the full yeast for several months.
