The Guarini Plus is the result of Aldo Viola's passion for Syrah. Convinced that the variety could also produce excellent results in Sicily in well-ventilated and north-facing locations, he set out on a search a good two decades ago and found what he was looking for in Feudo Guarini, a microscopic location 30 kilometres from his vineyard in Alcamo. As Aldo is not a man for half measures, he planted a few more hectares alongside a few existing vines, so that Syrah now accounts for a good half of his vineyard area. As desired, the exposure faces north and the soils are characterised by limestone and clay. The climate is so dry and warm that in normal years he only gets on the tractor twice to apply sulphur against oidium. He does not use copper against peronospora at all. Despite the dry conditions, Aldo does not use irrigation ("we never did") and relies on the vine's natural survival instincts.
In the cellar, the grapes are fermented spontaneously at 25-30°. The finished wine is then transferred to new and used 600 and 800 litre tonneaux, where it matures for 6 months without any intervention. The Guarini Plus is neither fined, filtered nor sulphured.
Dark, elegant, vertical. Dark plums, Mediterranean herbs, juniper and pepper cover a wide range of aromas. On the palate, compact tannins combine with a substantial and velvety body.
