Some grape varieties manage to break beyond their local boundaries, while others do not—and it's not always clear why. Spergola has a delicate aromatic profile that, when traditionally fermented, evokes white flowers. When vinified on the skins, additional notes of orange peel and clove often emerge. It also possesses a lively, refreshing acidity, which makes it particularly well-suited for sparkling and sweet wines. Despite all these positive traits, it has never been planted outside of Emilia—and even there, it is found only around Scandiano.
This hasn’t changed, even though—according to grape variety expert Ian D’Agata—Bianca Capello, once Grand Duchess of Tuscany, was an avid fan, and Matilda of Canossa once gifted a bottle to Pope Gregory VII. Today, just over a dozen winemakers are committed to preserving the variety, including Ca’ de Noci, whose Riserva dei Fratelli, made entirely from Spergola, demonstrates the remarkable potential this grape has to offer.
