Davide Spillare spent several years as an apprentice to Angiolino Maule, the founder of Vinnatur, who lives just a few houses away from him. It is therefore not surprising that the conversion from co-operative winemaker to self-bottler was accompanied by a metamorphosis into natural winemaking. In the few years since its beginnings, things have gone steeply uphill. The initial two hectares have now doubled in size. More importantly, however, his interpretations of the criminally underestimated Garganega variety have made a significant contribution to its renaissance - in Italy they call it the "Garganega revolution".
