Jörg Bretz doesn't care about trends, which is why he doesn't feel like making Pèt Nats. That's a shame because he would probably make decent PetNat's. Anyways it's ok, because he makes great sparkling wine instead.

He uses Pinot Blanc grapes, which are harvested when they are perfectly ripe. Not earlier, like almost everyone else. Acidity, he says, is important, but it's sufficiently present in his grapes when they are ripe. It is important to him that his sparkling wine has substance and also tastes like the underlying base wine. Therefore he treats the base wine for the spakling like a still wine in the cellar. This means that his sparkling wine is spontaneously fermented and then ages in wooden barrels for two years. After this prolonged aging the second fermentation in the bottle is started. After another two years of bottle-aging the sparkling wine is disgorged and filled up without dosage. 

Style

Elegant, dynamic, with a fine perlage. This sparkling has substance and strength balanced out by a mouthwatering acidity. It's compact and develops wonderfully with some air. It offers salty and nutty notes paired with fresh brioche. The fruity flavors stay in the background.
