White wines made from red grapes have been known in the wine world for a long time – the by far best-known example is Champagne, where the first Blanc de Noirs made from Pinot Noir grapes were bottled in the late 1960s. The principle is simple: the grapes are hand-picked, brought to the cellar as quickly as possible and pressed. Since the flesh of only very few red grapes is actually red, this produces a pale juice that can subsequently be calmly vinified into a white wine. Which grape varieties are particularly well suited to this approach is – at least for the time being – difficult to say, quite simply because the necessary experience is still lacking.

Daniele Delaini has now made a white version from exactly the same grapes used for the red Lassuperiore. He approached the wine with the same artisanal precision and meticulousness as always: once pressed, the Lassuperiora in bianco was spontaneously fermented without temperature control, neither fined nor filtered, and aged for one year in used barriques. The result is precise, textured, inviting, vibrant, structured, juicy and marked by clear fruit and floral aromas.
