At the same time, countless other winemakers across the country are embracing the tradition of Rifermentato – a Frizzante wine that undergoes a second fermentation in the bottle, usually without disgorgement (removal of the yeast sediment) – and are playing a key role in establishing this rediscovered sparkling wine style.
