For centuries, Vigiriega was one of the most important white grape varieties in the south of Spain. It was at home on the Canary Islands and in the area around Granada, but then phylloxera came and killed it off - for good. The fact that it exists again today is due in part to Manuel Valenzuela, who not only rediscovered it among local winegrowers in the Andalusian Alpujarras, but also planted it consistently afterwards.
Vigiriega used to enjoy great popularity primarily because of its high basic acidity. In a region that lies at the same latitude as Algiers and Tunis, this is obviously a decisive factor.
The grapes for the Brut Nature were harvested by hand and fermented spontaneously. After a few months - once the lees had settled naturally - the wine was bottled unsulphurised, where secondary fermentation was initiated using the unfermented must from the same grapes.
A further 24 months later, it was disgorged and the removed yeast was replaced with Vigiriega still wine (with no added sugar).

Mineral, powerful, fruity. Apple and yeast notes. Slightly floral. Despite its freshness and liveliness, it is full-bodied and dense. Fine perlage. Has slightly oxidative flavours that lend it additional complexity. Shoots straight towards the palate. Long finish.
