Roland Tauss works specifically to achieve differences and not to create a product that is always identical. To achieve this goal, the vineyard is cultivated biodynamically. The vines are rooted almost entirely in Opok, which gives the wines their very own mineral nuances and ensures firmness and vibrancy. The work in the cellar is carried out in logical continuity with the work in the vineyards. Fermentation starts spontaneously and without temperature control. Depending on the grape variety, the wines undergo shorter or longer maceration times.
