The Wines of Semicolon
Just like "the semicolon, which is not subject to any grammatical rules in terms of use and interpretation", Katharina Salzgeber and Nikolas Saahs from Nikolaihof ignore the usual procedure in the interpretation of their grape varieties and do what they think is right. In the vineyard, this is simply called biodynamics. In the cellar, the two follow the motto "everything may, nothing must". In favour of corners, edges and character, the musts/wines do not have to undergo fining, stabilisation or filtration, and sulphur is also not used.
