If you've never heard of Boschera, you'd be forgiven. Although the white grape variety was supposedly widespread in Trevigiano, the area around Treviso, in the 18th century, there are only six hectares of it left today. One of them is owned by Alessandro Winkler, who decided in 2012 to add winemaking to his profession as a dentist - on the one hand to do "something in the fresh air", and on the other to help the old grape variety enjoy a small renaissance.
Boschera sprouts and ripens late. It benefits from a long autumn, during which the grapes can gradually accumulate aromas without storing too much sugar. It has a thick skin and is fairly resistant to peronospora (which is why Alessandro, which has been certified organic since 2017, manages with very little copper in the vineyard).
The main reason why it is now only planted sporadically is its low yield, an absolute no-go in Prosecco, to which the Colli Trevigiani belong - which is why the variety (as absurd as this may seem due to its long history in the region) is not authorised in Prosecco today despite its high qualities and Alessandro's Frizzante is therefore not allowed to bear the name of the appellation.
But it's not just the grape variety that differs fundamentally from what we are used to seeing in this area. Alessandro dispenses with the potential arsenal of additives, does not fining or filtering and allows the secondary fermentation to take place in the bottle.
The result is a dry, delicate and fine-bodied wine, which throws bread crusts, stone fruit and fresh herbs into the aroma balance; characterised by an invigorating but never superficial acidity, it scores with an astonishing depth despite its lightness and sets the bar very high for everything else that comes from Prosecco.
