The Wines from Grawü
Leila Grasselli and Dominic Würth, the two protagonists of Grawü, want to get the real, unadulterated flavour of the grape, a particular terroir and the people who cultivate it into the glass. They try to capture the liquid memory of a vintage in all its facets and at the same time explore the specific characteristics of their grape varieties and their soils in detail.
To do this, the two use methods that are generally portrayed as avant-garde, but are in fact deeply rooted in history. Traditional craftsmanship in the vineyard and spontaneous fermentation, long maceration times, ageing in large wooden barrels and the absence of fining and filtration in the cellar give Gewürztraminer and Sauvignon Blanc as well as the PIWIS (Souvignier Gris, Regent) structure, vitality, drinkability and plenty of character.
