Antonio Perrino is a garage winemaker. It was already before taking up the term in the Bordeaux, depriving him of its actual meaning and formulated a marketing idea and communication strategy from it and - consistently as always in the Bordeaux - implemented it.
These ideas and strategies passed Perrino like the concentrated and black merlots, who conquered the world as a contribution to the Bordeaux to wine cultural history from the 1980s and who also found their supporters around his homeland in Dolceacqua in Ligew. He continued to rely on his monastic and pale horse, one of the most filigree and most sophisticated red wines in Italy. And to his mendor, who refused to be as consistent as his red brother, the national trends.

Antonio macerated the Vermentino for five days. But - and here we quote the words of others who could not be more apt - "the maceration is not intended to give the wine tannin and a heavy chassis on the way, but rather has the function of emphasizing its flavors in addition to emphasizing" (Castagno & Co.: Vini da Scoprire). The little tannin in the wine is so short and fine that you hardly perceive it - for the structure, a mixture of mineral substance and acidity that gives the wine pressure and pull and carries it towards the palate is mainly responsible. There and a little further down you will stay for the next few minutes.
It will be expanded in not too large wooden barrels for over 18 months, with Antonio, unlike his French colleagues, 100% relating to used wood.
