The C.C.C. is the most daring of Daniele Ricci's many Timorasso variants. The name itself bears witness to this: the C.C.C. stands for "come un cane in chiesa", "like a dog in church", and thus subtly indicates that we are dealing with a wine that has been vinified beyond classic conventions.
In this case, Daniele has looked across the border to the French Jura and produced a wine that follows the principles of vin jaune production, but which also has a personal and local flavour thanks to a three-day maceration and the choice of grape variety (Timorasso instead of Chardonnay).
The grapes come from the same vineyard as the San Leto, his Timorasso masterpiece. The first stages of vinification were also identical, but the ageing process followed the French model. Daniele did not fill a 2000-litre acacia barrel to the brim, so that the wine developed a deliberate oxidation through contact with the air, giving it an original, slightly nutty basic structure. After six years in the barrel, the C.C.C. was bottled unfined and unfiltered.
The nuts are complemented by a variety of other flavours: yellow fruits, oranges, salt, honey, camomile and meadow flowers. The expansive flavour finds its counterpoint in a concentrated and taut texture that combines fine tannins with a supporting acidity. The body is dense and powerful, the finish earthy, salty and fresh.
