Lambrusco comes in all possible shades of red, depending on which variety of the Lambrusco family you are dealing with. Rarely, however, there is also a pink version, which is in no way inferior to its red counterparts in terms of quality (incidentally, we are not the only ones who find this to be the case; a journalist from Schluck magazine recently noted this, who - on the trail of Lambrusco - put Perfranco at the top of her personal hit list).
The two large varieties from the Emilian plain, Sorbara and Salamino di Santa Croce, are particularly suitable for this. Both have a good basic acidity and translate their very delicate flavours perfectly into the pink interpretations.
Gianluca relies exclusively on Salamino grapes for the Perfranco. After an initial vinification and subsequent six-month maturation in concrete vats, he injects the wine with a dash of sweet must reserve (instead of sugar and pure yeasts) and ferments it a second time in the bottle.

Razor-sharp, purist and extremely lively. Fine perlage. Dust-dry, with crystal-clear flavours. Pink grapefruit. Salt and floral aromas. Elegant. Agile. Scores with the fine blade. Finishes subtly but emphatically.
