The Saignée is a clear reference to France, especially to Provence, where excellent rosé wines are still produced today using the (Saignée) method of the same name. Aldo has also done this for many years - but with the 2018 vintage, he is going one step further and building a finely woven, playful and lightweight bridge to the red wines with the cuvée of Syrah, Perricone and Nerello Mascalese.
Aldo leaves the resulting wine in stainless steel tanks for several months before bottling it unfiltered and without added sulphites.
Style
Open, aromatic and inviting: Aldo's light red wine radiates Mediterranean warmth, accompanied by herbal and ripe red fruit flavours. As his vineyards are located at over 350 metres above sea level and also open out towards the sea, the grapes cool down a little at night and provide an acidity that is never overpowering but is noticeable. The texture is soft and full-bodied, the finish is fruity and juicy.
