The name "L1" comes from the designation of the first lumbar vertebra, which Davide Spillare fractured in a tractor accident several years ago. (As much as we enjoy the L1, we sincerely hope there will never be an L2!) The L1 is a Rifermentato, a wine that undergoes a secondary fermentation in the bottle after an initial fermentation in a steel tank. After this process, the wine is neither disgorged nor dosed.
In practical terms, this means that the yeast present in the wine is not removed (disgorgement), nor is it topped up with a sugar solution or sweet wine reserve (dosage).
This approach has several sensory and aesthetic consequences:
- The wine remains cloudy, as the yeast stays in the bottle until the end.
- At the same time, important aromatic compounds are preserved in the Frizzante, which would otherwise be lost along with the yeast during disgorgement.
Style
Davide’s L1 has aromas of herbs and ripe apples, complemented by the soft texture characteristic of Garganega. If you're seeking sophisticated alternatives to Prosecco or simply want to try something new, you’ll find plenty to love in Davide’s sparkling creation.
