Carricante is one of Italy's great white varieties - provided it is grown in the right place and tended by the right hands. The right hands are those of Rori Parasiliti and they know exactly what they are doing; the right place is Mount Etna, more precisely the Pirao site, a vineyard at an altitude of 1000 metres. Not many grape varieties feel at home up there. Carricante, however, breathes in the Mediterranean mountain air and produces its best examples under these conditions.
The differences in temperature, which fall from 30°C during the day to sometimes 10°C in just a few hours, are particularly important and ensure that the ripening phase is slow, the acidity remains high and the skin compact and firm. According to Rori, the latter gives the resulting wines flavour, depth, structure and character, which is why he leaves them in contact with the must for three days after harvesting. The Carricante is matured in steel tanks without any intervention. There is no filtering and minimal sulphurisation.
Finely textured, dense, full-bodied. Chamomile, mandarins and almonds on the nose and palate. Structured and juicy. Has enormous energy & tension. Firm acidity. Combines power, complexity and drinking flow. Finishes crystal clear and mineral.
