San Vincent comes exclusively from Sorbara, the most delicate and elegant variety of the rather heterogeneous Lambrusco family. Sorbara is mainly found in the south of Modena, in the lowlands around Carpi, whose sandy soils provide the perfect substrate for the variety.
Gianluca Bergianti incorporates it into several of his frizzante wines, vinifying it exclusively as a single-varietal rosato to emphasise the delicacy of the aromas.
The name of the wine is a tribute to a trip to Francis Boulard, one of the grand masters among Champagne's winegrowers. A festival is celebrated there at the beginning of April in honour of Saint Vincent, the patron saint of winegrowers.
The San Vincent is fermented spontaneously in the best natural wine tradition without unnecessary intervention and then matured for a few months in concrete cisterns. Secondary fermentation is initiated with sweet reserves of the same wine and takes place in the bottle. There is no disgorgement.
Style & flavours
Flavours of currants, oranges, cherries and roses. The flavours are embedded in a vital body whose invigorating acidity gives the wine direction. The texture is crystal clear and dynamic, the finish energetic, powerful and elegant.
