Antonio and Giacomo Baruffadi from the Castello di Stefanago lead a gradual group of winegrowers who demonstrate with their bubbling versions, which is slumbering potential in the floors of South Lombardy. The two brothers mainly produce sparkling wines that are produced according to the Metodo Ancestral. The still fermenting wine is filled into the bottle at approx. 25 g/l residual sugar and fermented in it - this is complicated and you have to be careful that the finished spumant does not fly around your ears due to the high pressure As a result, you get a nuanced, lively and finely knitted wine in the bottle - and Antonio and Giacomo know what they do.
It is also exciting that the Castello di Stefanago can rely on Pinot Nero a hundred percent, which in the region, like nowhere else, has a tradition in Italy. The surrounding winegrowers have been dealing with the variety for two hundred years and set up the crossbar in both silent and bubbling versions.
The Pinot Nero-Reben roots in a vineyard, which is exposed south south, vineyard, the underground of which consists of sound and tuff.
The grapes are read and pressed immediately after arriving in the basement so that there is no color extraction from the shells. As usual, fermentation starts with the Metodo Ancestral in the tank and ends in the bottle - in between, at approx. 25 g/l residual sugar. At the end of the 36-month expansion period, the Blanc de Noir is resolved and replenished with the same wine.
style
Balanced, substantial, vital. Mature, juicy fruit + brioches. He never plays his whole aroma spectrum subtly and reserved. The Pinot Nero Brut Ancestral is a bridge from the Oltrepo Pavese towards Champagne. A creamy and dense texture combines with well -integrated acid and invigorating perposition. Sustainable and with a lot of potential for the coming years.
