The Camaleonte (Chameleon) is - as the name suggests - a somewhat unusual rosé. In contrast to the usual practice, it is not a red variety that is briefly macerated, pressed and vinified, but rather wines that are already finished are cuvetised and blended into one big whole.
Fabio Ferracane uses all the wines from his programme for this: red and white, Catarratto and Grillo as well as Nero d'Avola and Merlot. The composition changes from year to year, so in some years it can be weightier in others more light-footed - whereby the idea is always to bring a wine into the bottle that should accompany as many occasions and dishes as possible and can be drunk with equal pleasure in winter and summer. He suggests a drinking temperature of 12-14°C.
