The Biancoviola is the white answer to the red Moretto. It consists of three different grape varieties from three vineyards located far apart from each other. The grapes for the Grillo ripen in the inland hills around Segesta, the Grecanico vines are rooted in the wild west of Sicily, while the Catarratto vines in Alcamo have a view of the sea. Aldo's aim with the Biancoviola is to make a wine that captures the warmth of Sicily while remaining lively and elegant.
Aldo Viola ferments the three varieties separately, leaving the Grillo in contact with the skins for three weeks, while the Grecanico and Cataratto, which are harvested later, are pressed immediately. The three are then matured together for several months in stainless steel tanks.
Style
Vital, savoury and fruity. The only wine from Aldo in which floral notes appear, albeit in a restrained manner. The rest is ripe, yellow fruit, maquis and a few citrus notes. The palate is dynamic, lively and agile, with a compact, refreshing and juicy finish.
