Guanciabianca: A Brilliant Expression of Catarratto
Overview
Catarratto is Fabio Ferracane's flagship grape, and Guanciabianca offers an excellent introduction to his craft. The vines are rooted in a plateau at 160 meters above sea level, thriving in limestone-rich soils. In the hot summers of Marsala, the limestone adds a refreshing tension and clarity, complementing the grape’s naturally low acidity and contributing to the wine's well-structured character.
Vinification and Aging
The wine undergoes spontaneous fermentation with wild yeasts, including a two-day maceration on the skins. It is matured in stainless steel tanks. Fabio avoids fining and filtration, adding minimal sulfur depending on the vintage.
Style and Aromas
Guanciabianca balances richness and freshness, with aromas and flavors of ripe fruit, almonds, yeast, and floral notes. It is vibrant and energetic, with a texture that promises graceful aging despite being Fabio’s entry-level offering.
