Črna: A Singular Sparkling Teran
The Črna is a sparkling wine crafted from Teran using the méthode traditionnelle, authentically expressing the grape’s natural vibrancy. Packed with acidity, tannin, energy, and character, Črna reflects the Čotar family's distinctive approach. While inspired by Champagne techniques, they deviate significantly. Grapes are harvested late at full ripeness, vinified as a classic red wine, and aged for five years in wooden barrels. Only then, in autumn, is partially fermented sweet Teran must added to initiate the secondary fermentation in the bottle. Over 12 months, a lively mousse develops, resulting in a wine unlike any other.
Style
Črna is bold, juicy, and dark. It combines the intensity of a robust red wine with the freshness and energy of an exceptional sparkling wine. Aromas of forest, earth, and berries lead to a powerful and linear palate with a rocket-like trajectory to the finish. Both uncompromising and unique, like its still Teran sibling, it pairs perfectly with prosciutto, salami, and other cured meats.
