The art of foam wine production is also one of the many talents of Branko and Vasja Čotar. For this they take their own way. For example, you attach great importance to the quality of your basic wine, for which only flawless malvazija and Vitovska grapes are read in minimal quantities (32HL/ha) and with perfect maturity.
They are fermented in open wooden states, with the fermenting wine staying in contact with the shells for at least seven days. Pressed and fed through, it is expanded in used wooden barrels for three years. Neither embellished, filtered and also not sulfurized, the two then fill the Bela basic wine into the bottle for secondary fermentation, which is initiated by the addition of sweet must. There he stays there for a few months before he goes without being resented and goes on sale without haste.

Oranges, leaves, herbs. Radiant, warm aroma. Not a quiet river, rather a mountain stream characterized by rapids. Has body, depth and substance and combines it with vitality and dynamics. Long and impressive. Big sparkling wine.
