To forestall any questions right from the start: the number 99 (Novantanove) is neither a reference to the 99 names of Allah, nor to Wayne Gretzky’s jersey number, and certainly not a nod to Nena and her balloons. It simply stands for the year in which Corradi Dottori decided to turn his life around and become a winemaker.

For the production method of NovantaNove, Corrado looks far beyond his own borders to Jerez. There, the solera system forms the basis for sherry. In this system, barrels are stacked on top of one another over many years, with the youngest wines at the top and the oldest at the bottom. When some wine is drawn from the bottom barrel, it is replenished with wine from the barrels above. In this way, a certain amount of the base wine always remains present, even though its overall quantity naturally diminishes over time.

Through the continual movement of the wine and the gentle exposure to air in the wooden barrels, a deliberate oxidative note develops after a certain period. In NovantaNove, this is reminiscent of almonds, dried fruits, and orange peel.

Both red and white grapes are used for NovantaNove. Before fermentation, they are briefly dried to increase sugar and aroma concentration.
