The Saldalama is a possible introduction to Max Brondolo's great world of sparkling wines, a kind of preparation for his highly individualised and delicate frizzante and a reference to Castelvetro di Modena, the capital of Modenese Lambrusco production. With the exception of Trebbiano di Spagna, all of its grape varieties are represented: Lambrusco di Grasparosso is responsible for power, dark fruit and energy, Lambrusco di Sorbara contributes elegance and acidity, Uva Tosca provides freshness and bright red fruit, the extremely rare Lambrusco Fioranese gives the wine rusticity and backbone and the white Trebbiano Modenese delivers bright fruit and fine floral notes.
Max knows how to combine all five and create a harmonious whole from the many individual parts. He vinifies each grape variety separately, matures them in steel tanks for nine months, cuvées meticulously and starts the secondary fermentation in the bottle using a sweet must made from the same grapes. In keeping with local tradition, he does not disgorge any of his sparkling wines.
The Saldalama is precise, straightforward and focussed. It flows smoothly across the palate, offering plenty of bright red fruit and a fine flavour, is elegant, crystal clear and lively. It has substance in a pleasantly restrained manner and is impressive and present far beyond the palate.
