Thomas Niedermayr is breaking new ground. She had already hit his father when he switched the vineyards of his winery to biological management 30 years ago and a little later with the First Piwis - mushroom -resistant vines - best. Thomas is now doing what we think is forward -looking: he ignores the mass market and instead gets to the bottom of the qualities of its inter -specific crossings. He tries to understand their specifics in the vineyard as precisely as possible and to translate them into expressive, harmonious and complex wines in the basement with sensitivity and experience.
His souvignier Gris grows on a lime -rich, with a dolomite soil in a vineyard that pulls up from 270 to 400 meters, in a cool climate influenced by the Eppaner ice holder, which is not far from the winery. The grapes were carefully rated, pressed and Spontaneously fermented. The wine was matured in 500-liter oak barrels and three more in the steel tank for eight months.
