The Pinot Grigio Fuoripista ("off-piste") is a bold alternative to the common image of this ubiquitous variety in Trentino. Far from banal or insignificant, this Pinot Grigio is crafted with depth and substance. The Fuoripista was born out of a collaboration with Marco Devigili, who practices biodynamic viticulture in the sandy, Dolomite-pebble-laden soils of the Campo Rotaliano.
The wine is aged in Spanish clay amphorae (Tinajas), which at Elisabetta Foradori’s winery are not trendy winemaking tools but rather serve as a means to authentically express her vision of wine. Her cellar now contains dozens of these vessels. Unlike some other winemakers, she does not bury her amphorae in the earth but keeps them mounted in frames, allowing direct contact with the air.
Whole Pinot Grigio grapes spend eight months in these amphorae, releasing their aromas, pigments, acids, and tannins slowly and with care. After this period, the wine is removed from the amphorae and bottled unfiltered, with minimal sulfur dioxide addition.
Style
Sometimes, a wine’s color deserves special mention. The Fuoripista exhibits a rich, golden hue with a slight pink shimmer, thanks to the slow extraction of pigments from the grape skins. Aromas drawn from the skins range from dried leaves to orange peel and cloves. The subdued acidity is balanced by compact tannins, which contribute to a firm and textured structure. The overall impression is vibrant and dynamic, with an aromatic, warm, and juicy finish.
