Nerello Mascalese, misappropriated and groundbreaking. The brilliant variety from Mount Etna is not only suitable for full-bodied and elegant red wines, it also makes an excellent protagonist for finely chiselled sparkling wines: Pinot Noir, to which it is often compared, sends its regards.
Cultivated on the northern slope of the volcano at an altitude of 700 metres, Rori Parasiliti harvests its grapes by hand from 50-year-old vines. The yield is low, but the grapes are rich in extract and expressive.
Once in the cellar, they remain in contact with their skins for over 40 hours before being gently pressed and fermented spontaneously. After a brief stopover in steel tanks, the unfiltered and minimally sulphurised base wine is bottled for secondary fermentation, where it develops its bubbles and aromas over the following weeks and months.
Ripe red berries, citrus fruits and herbs, salt. Roris Rosato Frizzante reflects its Mediterranean origins. The texture is cool and elegant, the structure bone-dry and invigorating. Focussed on the palate. Leaves mineral-fruity associations in the aftertaste.
